Recipe for Welsh Faggots


Faggots are a delicious dish that's filling and very tasty. Faggots make a quick and easy meal for people on a budget. Traditinal this dish is served with mushy peas but this recipe is for Welsh Faggots and Onion Gravy.

You Will Need :


  • 450 g Pigs Liver, Pork Liver or Lambs Liver
  • 3 Medium Sized onions
  • 80 g Shredded beef suet
  • 100 g Fresh breadcrumbs
  • 1 tsp chopped sage finely chopped
  • 500 ml beef stock
  • Frozen garden peas
  • butter
  • 125ml Red Wine
  • 1 tbsp Tomato Puree

Method


The faggots


Take 2 Onions and the Liver and chop finely. ( This is made easier with a blender )

Put the Liver and Onions into a large bowl and stir in the Suet, breadcrumbs and the sage. Ads a pinch of salt and pepper.

Roll the mixture into 8 tennis sized balls and place them into a large oven dish greased with butter.

The Gravy


Warm the butter up in a large sauce pan.

Chop a onion up finely and add them to the pan with the melted butter. Stir for around 5 minutes on medium heat. Next add the peas and let caramelize for around 10 minutes. Next add the red wine and Tomato Puree and simmer for another 5 minuted to let it boil off the alcohol.

How to chop an Onion

 

I can stop your eyes from running but here is a way of cutting an onion finely.


You Will Need


1 Onion

1 Sharp Knife

1 Chopping Board

1 Swimming Goggles

Step 1: Introduction

I’m going to show you an easy way of chopping an onion into fine even pieces.

Step 2: Top & Tails

Place your onion on a chopping board, take a sharp knife and cut the shoot off the top and the root from the bottom.


TOP TIP: To stop yourself from crying when chopping an onion, try wearing swimming goggles. This stops the scent inducing gases from the onion from coming into contact with your eye

Add the hot stock to the Onions, Peas and Red wine and stir well. If you like a thicker gravy add some flower mixed with a little cold water.

Pour the Onion gravy over the Faggots and cover with foil. Place in a pre-heated oven at 180 ° (gas mark 4) for about 30 minutes until the juices from the Faggots run clear. Uncover and stir the gravy pouring it over the Faggots to help stop them burning. Cook for a further 10 minutes uncovered.

Serve with mashed potato or just have them with some fresh bread.
