This amazing tasting strawberry tart is perfect for a finish to a great party and will be enjoyed by everyone. Best to use ripe, seasonal british strwberryies.
You will need

Step One
Preheat the oven to 190 degrees C / Gas Mark 5.
Step Two
Roll out the pastry on a flat lightly floured surface into a large round shape about 5mm thick. Put into a 20cm round shallow tart tin with a removable base, leave some excess pastry around the edges to allow for any shrinkage. Put into a fridge for about 30 minutes.
Step Three
Melt the white chocolate in a bowl over a pan of hot water, then take from the heat and allow to cool slightly.
Step Four
Line the pastry with baking paper and put in dried or ceramic baking beans and bake blind for 15 - 20 minutes until lightly browned. Remove the beans and return to the oven for about 5 minutes. Remove from the oven and remove any excess pastry from around the tin.
Step Five
Brush the base and the insides with the white melted chocolate and leave to cool and set.
Step Six
Whip the double cream and the icing sugar together in a large bowl until stiff. Fold the whipped cream and icing sugar into the pastry cream. Spoon the filling into the cooled patry case and level.
Step Seven
Slice the strawberries into thin slices and arrange around the filling until all covered overlap the strawberries.
Step Eight
Lightly brush the strawberries with the warm strawberry jam to glaze.
