Red Onion Marmalade

Recipe for Red Onion Marmalade this recipe is ideal for serving with Pate, Cheese tarts, Ploughmans etc

You Will Need


  • 250g butter
  • 500g red onions, halfed and sliced
  • 1 1/2 tablespoons light brown sugar
  • 250ml dry red wine
  • 3 tablespoons red wine vinegar
  • salt and pepper

 

How to Make Red Onion Marmalade

 

Step One

 

Melt the butter in a medium pan and add the sliced red onions and brown sugar, stir often over a medium heat for about 10-15 miniutes until the onions are soft and slightly caramelized.

 

Step Two

 

Add the Red Wine and Red wine vinegar and get all the sediments from around the base and side of the pan to deglaze. This is best done using a woodern spoon.

 

Step Three

 

Simmer on a low heat until the pan he liquid is drastically reduced and the onions are very soft. Season to taste with salt and pepper

 

You can store this Red Onion Marmalade in a air tight jar for use later. Ideal for serving  with Chicken Liver Pate
