Meatballs in Tomato Sauce

Sicilian-Style

 

This hearty recipe makes for a great family meal and can be served with rice, pasta or potatoes, if desired.

You Will Need


FOR THE SAUCE

  • 1 Onion, peeled and finely chopped
  • 2 Garlic cloves, peeled and finely chopped.
  • 2 x 400g cans chopped tomatoes
  • 4 tbsp finely chopped basil

FOR THE MEATBALLS

  • 600g Extra lean minced beef
  • 1 small Onion, peeled and finely chopped
  • 2 Garlic cloves, peeled and crushed
  • 2 tsp dried oregano
  • 1 tbsp fennel seeds
  • 4 tbsp finely chopped basil
  • salt and freshly ground pepper (to taste)
  • 1 small egg, lightly beaten
  • chopped parsley, to garnish


Step One

First make the tomato sauce, put all the sauce  ingredients into a frying pan or saucepan and bring to the boil.


Step Two

Reduce the heat and simmer for about 15 - 20 minutes stirring often.


Step Three

To make the meatballs, put the minced beef, onion, garlic, oregano, fennel seeds, basil and seasoning into a large bowl and mix together well.


Step Four

Bind with an egg and divide into 20 portions.


Step Five

Roll each portion with your hands to form a ball.


Step Six

Place a non stick frying pan over a medium heat and brown each meatball on all sides. This should take about 5 - 6 minutes. Remove the meatballs and add to the tomato sauce.


Step Seven

Cover and heat for about 15 minutes or until the meat is thoroughly cooked.


Step Eight

Sprinkle with some chopped parsley.
