Leek, Potato and Bacon Soup Recipe

Great winter warmer this recipe. delicious taste and easy to make. This recipe is enough to serve 4-6 people so is ideal for the family.

 

You Will Need

  • 300g Potatoes peeled and diced
  • 300g Leeks Diced
  • 2 tablespoons Butter
  • 1 Clove Garlic Minced
  • 150g Bacon (lean) chopped
  • 700ml Chicken Stock
  • 290ml Milk
  • Black Pepper to taste
  • Cream (optional)

 

How to Make Leek Potato and Bacon Soup

 

Step One

In a large pan melt the butter over a medium heat and add the Potato, Leek, Bacon and Garlic. Sauteé all the ingredients until soft, Not browned.

 

Step Two

Add the Stock and bring to a boil then simmer for around 10-15 minutes until the potato are really soft. Remove from the heat and let cool for 5 minutes.

 

Step Three

Put the cooked ingredients into a Liquidizer and give it a whiz until a smooth liquid is achieved.

 

Step Four

Return to the pan, add the milk and reheat. At this stage if you would like a more creamer taste to can add the cream.

 

Step Five

Serve
