Lamb Rogan Josh

You Will Need

  • Low Calorie Spray
  • 600g / 1Lb bon less lamb shoulder cut into large pieces about 2cm cubed
  • 2 Large Onions halved and chopped thickly
  • 3 Cloves garlic crushed
  • 2 tsp Root Ginger finely grated
  • 2 Sticks Cinnamon
  • 2 tsp Chilli Powder
  • 2 tsp Paprika
  • 1 tsp crushed cardamon seeds
  • 4 tb sp Medium curry powder
  • 400g Chopped tomatoes
  • 1 tsp artificial sweetener
  • 600ml Lamb Stock
  • 2 large carrots peeled and cut into 2cm pieces
  • 300g Swede peeled and cut into 2cm pieces
  • Chopped Coriander
  • Salt and Pepper to taste

Step One

Spray a Large casserole dish with low calories spray and heat up over a medium heat, add the lamb pieces in small batches untill browned, removing each batch with a slotted spoon each time this should take about 2 - 3 minutes per batch. By adding in small batches you will be able to cook the meat more evenly.


Step Two

Spray the casserole dish again with low fat spray heat to medium and add the chopped onions, fry for around 1 - 12 minutes stirring occasionally until soft and lightly browned.


Step Three

Add the Garlic, Ginger, Cinnamon Sticks, Chilli Powder, Paprika and cardamon pods and stir-fry for about 2-3 minutes to release the aroma of the spices.


Step Four

Add the curry powder and the cooked lamb and stir-fry for about 2-3 minutes.


Step Five

Add the tomatoes, Sweetener, Lamb stock, Carrots and swede. \season with salt and pepper and bring to the boil.


Step Six

Reduce the heat to very low, cover tightly and simmer for around 2 hours. Stir occasionally to stop any sticking to the bottom of the pan.


Step Seven

Remove from the heat and garnish with the coriander and serve.
