Diane Sauce Recipe

The perfect sauce for steak, this recipe will get your taste buds stirring. You can find a recipe for steak here just replace the sauce with this diane sauce.

You Will Need:
  • 3 shallots, peeled and diced finely
  • 100g chestnut mushrooms, cleaned and thinly sliced.
  • 15g salted butter
  • 1 garlic clove, peeled and crushed
  • 1 -2 tbsp Worcestershire sauce
  • 1 tbsp Dijon mustard
  • 75ml brandy
  • 225ml double cream
  • Olive oil


How to make Diane Sauce

Step One
Heat some olive oil in a pan, once hot add the finely diced shallots and fry until soft. Add the sliced mushrooms, butter and stir around for two minutes.

Step Two
Add the Crushed Garlic, Worcestershire Sauce and Dijon Mustard and stir in for a minute. Turn up the heat of the pan  Pour the brandy into the far end and allow it to ignite – be careful that the flame that flares up doesn’t singe your eyebrows! Once the alcohol has burnt off, swirl the juices around the pan. Add the cream and allow the sauce to thicken before turning down the heat.
